Today I’m going to show you how to make this very quick, delicious and easy raspberry cake!

  • 1 shortbread dough
  • 100 g (3.5 oz or 7 tbs) sugar
  • 100 g (3.5 oz or 7 tbs) cream cheese
  • 250 g (8.8 oz or 17 tbs) mascarpone
  • raspberrys

Raspberry Sauce:

  • Raspberry leftovers and crumbles
  • 1 tbs icing sugar
  • a bit of lemon juice


  1. Preheat your oven to 160 C/320 F
  2. Grease your cake pan
  3. Cover your cake pan with dough
  4. Bake it for about 7 minutes in your oven. It may take longer (up to 30 minutes) if your oven is less powerful
  5. Mix sugar, cream cheese and mascarpone
  6. Cover the dough with the cheese mix
  7. Decorate with frozen raspberrys, don’t need to defrost them
  8. Put the cake in the fridge for about 2 hours
  9. Mix the sauce ingredients together
  10. Serve the raspberry cake with sauce and enjoy!
